Ingredients
2Baking powder - 1/4tsp
3Salt - 1/4tsp
4Unsalted butter - 4.5 oz (125gms)
5Powdered Sugar - 6 oz (175gms)
6Egg - 2
7Vanilla essence - 1tsp
8Grated lemon zest - 1 tbsp
9Milk - 4oz (120ml)
10Lemon juice - 2tbsp
11Yellow food color (optional)
Method of Preparation
Step 1:
Preheat oven to 180 ° c.
Step 2:
In a bowl sift or whisk together the flour, baking powder, and salt.
Step 3:
Add the butter to the bowl and beat the butter until soft and creamy (about 1-2mins).
Step 4:
Gradually add sugar and beat until fluffy. Add egg one at a time beating well after each addition.
Step 5:
Add the Lemon zest to the flour. Add the vanilla extract and beat until combined with the mixer on low speed or with a spatula alternatively.
Step 6:
Add remaining flour mixture and milk little by little.
Step 7:
Add lemon yellow color to the lemon juice. Then, add the juice to the mixture and fold in.
Step 8:
Bake at 180 ° c for 25 – 30mins or the toothpick comes out clean.
